Crazy Yummy! Cookies 'N Cream Pudding

This is the yummiest dessert I've made in weeks, and super easy! I got the idea after eating some Southern Banana Pudding a friend made for a gathering. I loved the texture, the gooeyness of the pudding and the crunch of the cookies, with the sweetness of the banana... so good! 

After that I got to thinking about how much I love cookies 'n cream ice cream, and how simple it would be to combine the two ideas. What resulted was a chocolate lover's dream! I loved it so much, I'm gonna share it with all of you today. 

Cookies 'N Cream Pudding

2 pkg. (3.4 oz) Jell-O White Chocolate Instant Pudding 

3 cups cold milk (if you're using sugar-free pudding, add another 1/2 cup of milk, or it will be too thick)

1 cup semi-sweet chocolate chips

1/2 cup cream or milk

The Winter Market at Horsefeathers, located at 346 Connecticut St., continues its successful run on Buffalo’s West Side from 9 a.m. to 1 p.m. Saturday. Entertaining guests this Saturday, March 9, will be singer/guitarist Casey Bolles from 9:30 to 11 a.m., followed by Ralph and Tamala Fonda (“Porcelain Train”) from 11 a.m. to 12:30 p.m. 

The market offers a wide variety of local food vendors selling everything from bread, spices, cheese, coffee, biscotti, cupcakes, cookies and eggs to vegetables, fruits, pasta,  salsa, dumplings, meat and wine. Customers will also find homemade soaps, all-natural dog treats and more.

3-Step Cream Sauce!

It can be tempting to buy one of those powdery packages when you want to make say, pasta Alfredo. They're easy and they taste good, right? Well, do they? In reality what you end up with is a bunch of preservatives and fake cheese flavor. The same goes for most jarred cream sauces, and even mac & cheese. I was a victim of bad sauce myself, until I figured out this no-fail way to make any cream sauce in only a few minutes. 

What I have here is a base. You can make it into any cheese sauce you like by just adding different ingredients. I'll give you a few suggestions after we've discussed the basic recipe.

 

Basic 3 Step Cream Sauce: 

1 shallot or small onion, diced

1 clove garlic, diced or grated*

2 tbsp butter

2 tbsp flour 

1 1/2 cups milk or cream

salt and pepper

 

1. Saute shallot and garlic in the butter over medium heat until translucent (couple of minutes).

The Winter Market at Horsefeathers, located at 346 Connecticut St., continues its successful run on Buffalo’s West Side from 9 a.m. to 1 p.m. Saturday. Entertaining guests this Saturday, March 2, will be violinist David Adamczyk from 9:30 to 11 a.m., followed by singer/guitarist Davey O. from 11 a.m. to 12:30 p.m. Adamczyk has been entertaining crowds for several years at the Elmwood-Bidwell Farmers Market.

Winter Market Continues Successful Run on Buffalo’s West Side

The Winter Market at Horsefeathers, located at 346 Connecticut St., continues its successful run on Buffalo’s West Side from 9 a.m. to 1 p.m. Saturday.

Entertaining guests this Saturday, Feb. 23, will be Adam Giancarlo from 10 to 11:30 a.m., followed by Davey O. from 11:30 a.m. to 1 p.m. The Child & Family Services Foster Care and Adoption Program will also host an informational table at the market this weekend.

Let's Go Gluten-Free: Banana Bread!

Remember when you were a kid, and your mother would keep a bunch of brown, not-so-attractive bananas in the freezer? And then one day she would take them out to defrost... and you'd think, "gross." But then she'd magically turn  them into one of the most delicious things on this planet? Banana bread!

Well, you no longer have to reminisce about that, because I've come up with a quick and easy way to have your banana bread and eat it too. Even if you're gluten-free!

Happy-Inner-Child Banana Bread:

3 large bananas, ripe 

1/2 cup sugar

2 eggs

1 tsp vanilla

4 tbsp oil or melted butter

2 1/2 cups of GF bake mix (I use Bob's Red Mill GF Pancake Mix or Wegmans GF All Purpose)

1/2 cup chocolate chips (optional)

Sara Elizabeth to Entertain at Winter Market at Horsefeathers

The Winter Market at Horsefeathers, located at 346 Connecticut St. on Buffalo’s West Side, will host Indie singer/songwriter Sara Elizabeth from 10 to 11:30 a.m. this Saturday, Feb. 9. Sara has been playing guitar since her ninth birthday and since then has added piano, ukulele and harmonica to her repertoire to help support her alto vocals. 

The market offers a wide variety of local food vendors selling everything from bread, spices, cheese, dumplings, coffee and desserts to eggs, vegetables, dried fruits, pasta, meat and wine. Customers will also find homemade soaps, all-natural dog treats and more.
